The coffees change. The balance doesn’t. RE/MIX is the gravity-brewed counterpart to Incognito—built around a consistent flavor profile rather than a fixed recipe. We seasonally source exceptional coffees and continually adjust the blend as harvests change, pairing the best components available at that moment to preserve the character we want in the cup: vibrant, layered, and balanced . The result is a filter coffee with clarity and dimension, enough sweetness and structure to drink beautifully black, and enough body to hold its own with milk. The origins may change throughout the year, but the goal never does. Different coffees. Same intent. Always in balance

The character stays. The coffees change. Incognito isn’t built around a fixed recipe. It’s built around a flavor target. We seasonally source the best coffees available and continually refine the blend to preserve what matters most: depth, sweetness, balance, and versatility . As harvests change and exceptional coffees come and go, the components may evolve—but the character of Incognito remains unmistakably consistent. Expect an espresso that is complex, expressive, and smooth —structured enough to drink straight, with the sweetness and body to stand up beautifully in milk. No fixed formula. No compromising to keep the same coffees in the bag. Just the best version of Incognito we can make, every time
