Tart & Funky - 375ml Bottle Spontaneous Fruit Ale - 8% Ale brewed with Barbera wine grapes that has been freshly pressed and destemmed) and matured in oak barrels. No yeast was added except for the wild yeast from the skin of the grapes. The inspiration was the conjunction between the world of lambic and our peasant culture. A simple fruit juice, crushed and destemmed, a lot of... Just as much, not as simple flavoring but with the precise intent of lighting the fermentation in wood of this beer, without adding any yeast. Its recipe is a harmonious result honed over the years. Mine is not a fad but a definite intention. Fresh, vinous and fruity to the nose, qualities that are confirmed in the palate and that reveal a close link between the world of beers with spontaneous fermentation and that of the beverage of Bacchus. Tart & Funky - 375ml Bottle Kriek - 6% 3 Fonteinen Oude Kriek is the result of macerating hand-picked whole sour cherries on young lambic for at least four months, in a proportion of one kilogram of fruit per litre of lambic. The kriek lambic is then blended again with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the kriek lambic can develop into a beautiful, traditional, and refined Oude Kriek. With a pleasant tartness and organic notes of almond and cinnamon as it warms in the glass, 3 Fonteinen Oude Kriek, will age perfectly but may lose some of the vibrant red colours and forest fruit aromas. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley!

Tart & Funky - 375ml Bottle Wild Ale - 5% Solera is a 30% NSW raw spelt beer fermented with our house culture and aged in foudre. It’s recipe is similar to our Gold except raw wheat is exchanged for raw spelt. We will be taking successive pulls of this large barrel and are excited to watch the development of these pulls as the beer inside continually and eventually blends itself. Because we get less a chance to intervene and blend ourselves, Solera appears more tart than our Gold and Amber blends and has a distinctly unique body

Tart & Funky - 375ml Bottle Sour - 6.2% This beer is inocculated by wild yeasts (Brettanomyces included) and lactic bacteria. Small, dark and very sweet Damaschine variety plums, also called Ramassin in Piemontese dialect, are added in steeping to restart a new fermentation to characterize the product. BeerBrugna is matured in oak barrels (3 hl or 5 hl capacity) for twelve months. "The unique use of Damaschine plums gives to this extraordinary beer a lot of warm and sensuous fruity notes, facing clear, though never too aggressive, sour and citric flavors. Tart & Funky - 750ml Bottle Wild Ale - 7.7% Franc is a wild ale with Cabernet Franc and a touch of Kékfrankos red wine grapes. After maceration with the grapes, we aged the beer further for another year and a half on a foeder that previously contained Amarone wine from Veneto, Italy. This rounded out the beer and gave it more complexity and depth. Before bottling we added a small amount of a comparatively younger beer with Kékfrankos grapes, to give the overall blend some freshness. It starts with a delicate aroma of fresh strawberries, cherries and rose petals, followed by the wine notes of the barrel and some funk. In the first moments of tasting the beer you will get jammy red fruits like blackberries, cherries and raspberries, after which fresh plums and roasted bell pepper follow. The barrel gives the beer a rich spicy, almost chocolaty and smoky flavour

Tart & Funky - 750ml Bottle Wild Ale - 6.6% Sprong is a blend of wild ales, aged in oak puncheons (500L) for around 2.5 years, and a barrel fermented and aged saison type of beer. This saison was fermented in a large oak vessel and later transferred to oak barriques (225L) for another 6 months. Prior to blending the two parts together, the saison was slightly dryhopped for another 3 months. We've added a touch of Sicilian sage to the final blend to macerate a few days before bottling

This is the very finest Lambic that matured in the brewery's very best barrels. It is no coincidence that the barrels used for the Lambic for Geuze Mariage Parfait are also the oldest in the brewery. They were built between 1883 and 1914 and have been used as genuine Lambic foeders for more than 100 years. The microflora of the wild yeasts inside the barrels last for many generations and their unique evolution guarantees the gentlest and finest Lambic

Tart & Funky - 500ml Bottle Blended Sour - 6.3% TeKu Tavern in Seattle, WA brought together Urban Family Brewing Company, and Matchless Brewing to blend a special beer for their first anniversary. We selected two barrels from each facility, after trying a combination of roughly twenty different samples. A blend compromised of two golden sour barrels, one from Urban Family, and one from Matchless, were blended and allowed to finish in oak. As barrel aged beer enthusiasts are all too familiar with, good things come to those who wait. We believe this combination, given a little extra time in the barrel really let this beer develop, and added a depth and complexity unlike anything either brewery could produce alone

Tart & Funky - 12oz Cans Black Saison with Cherries - 5% Marrying the roasted malt notes of our black saison with the brightness of tart cherries, Cherry Paulie is a perfect easy-drinking beer as we head into winter here in the Northwest. When we released batch one of Paulie last year, we picked up a distinct hit of cherry tartness from our house culture nestled into the roastiness of the grain bill. Wanting to bring out these fruity notes, we dosed a few kegs of Paulie with some fantastic cherries left over from Val as a draft-only release. We liked it so much that we decided to up the cherry addition this year and make it a proper release! Calling to mind the malt character of a black lager, the base beer’s flavors of bittersweet chocolate, coffee, and dates are uplifted by tart Montmorency cherries grown by Rowley and Hawkins Fruit Farm in Central Washington. Balanced and sessionable, the fresh fruit profile comes to the forefront as the beer warms

Meeting the challenge of this aggressive, challenging beer style, Great Divide's Yeti Imperial Stout is an onslaught of the senses. An almost viscous, inky-black brew, Yeti opens with a massive, roasty, chocolate, coffee malt flavor that eventually gives way to rich toffee and burnt caramel notes. Fruit & Spice - 12oz Bottle Fruit Lambic - 3.5% We've already told you that our family never does anything the way other people do. Kriek Lindemans is a good example of that. In order to obtain a beer like no other, we have been adding whole sour cherries to our lambic for generations. Our meeting with American importer Charles Finkel in the 1970s revolutionised the fruit beer segment. Charles convinced us to export our old kriek to the United States by boat. What we had not thought of is that the movement of the waves would reactivate the fermentation process and cause the corks to pop during the trip. It was like something out of The Adventures of Tintin. To prevent that from happening, we therefore developed an alternative production method for our kriek. We use fresh, not from concentrate, unsweetened cherry filtrate which we blend with lambic that is at least one year old before fermenting & macerating for up to 3 days and pasteurising the whole batch. So the corks don't pop

This dark-brown beer, with its aromas of dried fruits, tastes nicely full in the mouth – with surprising touches of caramel and coffee – but also manages to be very refreshing at the same time. Be Still is a dark beer aged in both rye whiskey and fresh pinot noir barrels, then infused with cascara (the outer fruit of the coffee bean) and cocoa nibs. The craziest part of this project is we decided to present the beer ‘barrel-still’ with no bottle ferment, no carbonation. Much like a red wine, the characteristics of this beer are allowed to shine differently without the sharpness that sometimes accompanies CO2 in beer. The structure comes from the roast malt, the impact of the barrels, and the acidity produced from our house yeast culture. This old gueuze is a blend of old and young lambic matured in large oak barrels called foudres. It is then bottled in a beautiful champagne bottle where a second fermentation takes place. After 6 months, the gueuze obtains a golden colour and is slightly carbonated and tart. But kept in a cellar for a few years, it becomes truly exceptional!

Maceration took almost four months. We only used two-and three-year old lambics, which brings the weighted average maceration upon bottling to almost 21 months. The final fruit intensity clocks at 500 grams of grapes per litre of finished Druif. Thank you Henning & family!

Beginning with a blend of mature, amber-colored sour base that we've used previously in our Parliament series, Raspberry Commons underwent a secondary fermentation on exquisite biodynamic raspberries sourced from right next door at King Estate before another year-long maturation in neutral French oak barrels. Unlike Parliament, this version was not finished in stout barrels, but was instead given a second dose of local raspberries from Corvallis’ Stahlbush Island Farm at blending. This final touch not only balances the acidity but amplifies the fruit's natural sweetness, allowing the raspberry flavors to burst from the glass!

Tart & Funky - 375ml Bottle Fruit Lambic - 7% For this Pruim, we macerated hand-picked Limburg Belle De Louvain plums for four months on a blend of young lambik, as well as three-year and four-year old lambikken. The oldest lambik has been brewed by ourselves in the first days of 2019. The weighted average age of this blend upon bottling was more than 31 months. The final fruit proportion is 300 grams of Belle De Louvain plums per litre of Pruim. More than two thirds of the lambikken were brewed with Pajottenland cereals, sourced from our own Cereal Collective

Tart & Funky - 375ml Bottle Wild Ale - 6.9% A collaboration with Brasserie De La Senne ‘Terf’ first saw the light of day in July 2020. This local wheat beer was brewed by Brussels-based Brasserie de la Senne using old wheat varieties from the cereal collective of Brouwerij 3 Fonteinen from Beersel in Brabant. Part of the brew was immediately drawn onto small bottles and sold out immediately. Another part of the brew matured further for three years in oak lambic barrels. In November 2023, this ‘matured’ Terf was lit with young 3 Fountains lambic, in a 55/45 ratio. This Wild Terf is the fruit of collaboration between brewers and farmer(s) around Pajot landraces and with a fair income for the farmer. Above all, it is an ode to the historical agricultural link between the Brabant countryside and Brussels

After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. The area is famed for Miyamizu, an excellent mineral rich water for sake making. Sake - 140ml Cup Umeshu Sake - 12% Not your typical sweet Ume-shu, instead aiming to maximize fresh aroma and sourness of the fruit, and to achieve a bright rosé color. The plums are freshly picked local green Shirakaga plums, not the usual Nanko-bai. Quickly after harvest, they are brought to the brewery and the stems are removed one by one by craftsmen. The plums are then rinsed with a large amount of Fuji water and soaked in Shidaizumi Junmai made with Fujieda grown Yamada Nishiki at a low temperature to extract their aroma and acidity. From the rice to the plums, everything is locally produced. Only 140ml of umeshu in here because the plums take up room. Enjoy them too! Rasta is an Ume-shu that can be used as a food sake. It goes especially well with cheese. For example, cheese pasta with asparagus or a vegetable and cheese platter
